Bountiful Harvest

Just so I don't forget it all, I wanted to make an entry today to log in the things we jarred...
  • ketchup - chopped tomatoes, vinegar, a tiny bit of sugar, sweet and hot peppers, onions, garlic, and a sachet of peppercorns, cloves, and cinnamon All strained through a food mill then cooked down to a good consistency then jarred.
  • peach butter/jam - very sweet peaches mashed up with some ascorbic acid, lime, and honey with a little sugar cooked, pureed, then jarred
  • pickled peaches - we blanched them, then put them in a solution of 3 1/2 cups vinegar to 2 1/2 cups water and 3 cups sugar with a sachet full of cinnamon, ginger, cloves, and allspice), gently simmered, then jarred them. They should be good in the winter browned with a savory dish.
  • eggplant - we tried a trick French technique of thinly slicing them, layering with salt and thyme in a jar and covering the entire jar with olive oil...we'll see how it goes
  • tomatoes (those we just froze under the advice of a wise friend after a day of much canning - "just put em in a bag in the freezer")
